Kuih Loyang

Alahai nampak sangat terpengaruh dengan cerita Shafiq Goyang tu, sbb hari ni ada la sorang tu bergoyang sensorang kat dapur. Tapi kat rumah kami, tak panggil kuih Goyang, kami panggil kuih ni kuih Loyang, tak pun kuih Ros.

Kuih ni selalunya kalau raya kami beli ja. Tapi ada sekali tu, teruja sangat nak buat sendiri so ada la sekali tu buat time bulan puasa kat Malaysia. Terus order loyang tembaga nak bawak balik Jerman. So hari ni dapatla merasmikan loyang bertuah itu.


Tak le cun sangat, tapi boleh la..

Kuih Loyang:

100g tepung beras
100g tepung gandum
85g gula putih
1/4 sudu kecil garam
1 biji telur
200ml santan
100ml air
Minyak untuk menggoreng

1. Campurkan semua bahan dan gaul hingga sebati. Tapis jika perlu. Sediakan adunan ini dalam bekas yang tahan panas, jangan guna bekas plastik.
2. Sediakan kuali dan isikan dengan minyak hingga lebih kurang 3-4 cm.
3. Panaskan minyak dengan api sederhana
4. Bila minyak dah agak panas, rendamkan loyang dalam masa 1-2 minit.
5. Celupkan loyang dalam adunan, tapi jangan sampai adunan tadi menyaluti bahagian atas loyang.
6. Rendam loyang dalam minyak panas tadi dan 'goyang' loyang tadi sehingga kuih terpisah dari loyang.
7. Goreng hingga perang keemasan.
8. Ulang sehingga adunan habis.

Let's make the ultimate Kartoffelsalat!

Kartoffelsalat is potato salad in german. Usually I buy my potato salad from the supermarket, because they taste pretty good and I don't have to stand around in the kitchen to make them. It is pretty time consuming you know. Well, that was until I tasted my mom in laws potato salad. You see, every family here has their own recipe and naturally everyone says theirs are the best :). Just like our rendang recipe lah. This one is from a very new recipe book, that my MIL tried, which means not the turun temurun recipe lah. But I think they taste so good, I want to make it a tradition.

First you need 1 kg potatoes, the type that keeps their shapes when cooked. Just boil the whole kilo in salt water.

Then you need radishes, 10 medium sized ones.

Then you need sour cream, 100g will do.

One medium sized onion and a bunch of parsley.

This is meerrettich, grated horseradish. It taste like a milder wasabi. Not a must, but it gives a sharp taste to the salad.

Of course, gherkins.

This is veggie broth granules. Every german household has it and they put this stuff in everything, I mean EVERYTHING. Really. Kat Malaysia takda jual benda ni, so I guess you can use chicken stock atau home made sup sayur.

Remember the boiled potatoes? I skinned them after their boiled and chunk them into tiny pieces. Don't ask me why I skinned them after boiling, haha. I just obediently follow instructions. Anyway, I made a veggie stock consisting 3 tablespoons veggie granules and 150ml warm water. Add chopped onions, pepper and a generous dash of the gherkin juice. Then I pour this mixture onto the warm potatoes. They should be soaked until they cool down to room temperature.

Meanwhile I sliced the radishes and chopped the gherkins finely.

One hard boiled egg chopped into small pieces.

Here comes the cream mixture, 100g sour cream, 100mg mayonaisse and 2 tablespoons grated horseradish. Once the potato salad is cold enough, have a taste. Now you can adjust the salt, I don't put any salt in the beginning because the veggie stock can be very salty. So add the cream mixture, egg, radishes and gherkins. It is almost done now. Leave your precious potato salad to rest in the fridge overnight. Don't touch it!!

Now, the next day before you serve, chop the parsley and mix it in. Transfer everything into a nice clean bowl and sprinkle more parsley on top, just for fun.

Now your ultimate potato salad is ready!

We had guests today to share ours. Too bad the pictures came out not so good, I don't snap well under pressure !..haha.

Little P and his parents came to visit. It was lovely! The little guy can speak a few words now and he knows us by names.

Warm salad with potato croutons and roasted duck fillet

Hari ni makan salad for lunch. Bunyi macam diet kan? Not really!

The story is like this, usually we eat duck with bread dumplings, pickled red cabbage and gravy, which, exactly like it sounds, heavy on the stomach. Today I wanted something lighter and I have an appetite for veggie, so I made this light warm salad with roasted duck fillet.

Recipe:

Salad leaves,  I used a mix of lettuce and romaine
Onion, cut into thin rings
Cherry tomatoes, halved and pitted
Carrots, thinly sliced

for the potato croutons:
400g potatoes, peeled and diced.

Heat oil in a large frying pan. Sauté the potato cubes until brown. This may take a while.  When its starts to brown, season with salt, cayenne pepper and oregano.

for the duck:

The duck fillet is store bought so I just shoved them in the oven. I guess one can opt for grilled chicken breast or turkey breast fillet. No rules here!

salad dressing:

5 tablespoon vegetable oil
2 tablespoon balsamic vinegar
1 tablespoon runny honey
1 tablespoon mustard
1 tablespoon creme fraiché or sour cream
2 clove of garlic, very finely minced
1/2 teaspoon pepper
1/2 teaspoon salt
juice of half a lemon
juice of the roasted duck

I put all ingredients in a clean bottle and shake until they emulsify.

to serve:
Get a big plate, salad first, then the dressing, then the croutons and lastly the duck fillet. Dribble the sauce over them one more time. Sprinkle toasted sesame seed to garnish.
