The mentuas are on their way back, I am again online and updating my blog while watching City of Angels on tv. They were here since monday, we did nothing but ate, play nitendo wii and watch movies together. Sunyi pulak rumah when they are gone. Mamak is a little sad cause he had to work the week, though he only worked half days but still he didnt have much time to spend with his parents. Last² gua la jugak yang melayan his parents ngan lawak² bodoh gua. Nasib badan..hehe.
Anyway, mengikut tradisi orang sini, slalunya makan itik, angsa atau ayam belanda panggang on the 25th merangkap hari Weihnachten. I'd like to share my mak mentuas roast duck recipe, cause its very easy and very very sedap. To be frank its not her recipe, but a recipe adapted from a recipe book.

Glazed Duck
1 Duck, 2.3 kg, cleaned and dried
Salt and Pepper
1 Orange
50g Ginger
1 bundle of Coriander, (we used parsley,sbb tak jumpa coriander)
3 Tbsp Chili sauce
70g Runny Honey
2 tsp Lebkuchengewürz (a type mixed seasoning; instead of the Lebkuchengewürz one can use a mix of serbuk ketumbar, serbuk jintan, serbuk nutmeg, serbuk buah pelaga, serbuk bunga lawang, orange and lemon peel )
Method:
- Season the duck with salt and pepper. Preheat oven at 200°C (hot air oven at 180°C).
- Dice 30g ginger, slice the orange and chop the coriander. Stuff ginger, orange and the coriander in the cavity of the duck and close the cavity together with toothpicks.
- Put the duck on the oven rack and place the rack in the middle of the oven. Place a shallow baking tray filled with 1.2 liter hot water under it. A lot of duck fat will flow into the baking tray while roasting.
- Making the glaze: Chop ginger and coriander finely. Mix 3tablespoon of chili sauce, honey, 2 tsp of mixed seasoning and add the chopped ginger and coriander.
- Baking time is 2 hours. Start glazing the duck 45 minutes before the baking time ends. Glaze the duck every 15 minutes until the 2 hours of baking time is up.
- Boil unused duck parts (neck, liver) with 1 whole onion until cooked.
- Sieve everything into a saucepan. Add the fluids/fat from the baking tray.
- Season with salt, pepper and honey.
- Thicken with cream and a little corn flour if you like thicker sauce.

me too...kat malaysia jarang mkn itik sbb susah nak dpt, lagipun org melayu kan jrang makan itik....sini makan pun sbb ada jual itik halal kat supermarket..tapi kena masak sendiri aa..
