raya


Thats my german cheesecake on raya morning...

This is my first ever raya with my husband..a very interesting one, i muss say...i woke up in the middle of the night....excited sangat sbb nak raya....around pukul 2.45pagi german time...and i thought..i want to bake a cheesecake...so i did...so at around 3.30 a.m. i shove the cake in the oven, cleaned up a little bit...then around 4.00 a.m. i called my family in Malaysia...kat Malaysia time tuh dah pukul 10.00 a.m...so my family baru ja balik from solat aidilfitri..so after chitty chatty with almost everybody in Malaysia..hahaha...my cake was ready...took it out of the oven and placed it on our coffee table...then after subuh..i went back to sleep..lepas tuh...pukui 8 pagi...i woke up...OMG!..dah terlepas train nak ke masjid...dang!...
 lepas bangun tu..i straight away took that picture of my cheesecake...something for me to remember....btw...mamak slept through all of these incidence and he has no clue what happened...only the fact that we missed the train...



Simple German Cheesecake

Base:
200 g Flour
1 teaspoon Baking Powder
75 g Sugar
1 packet vanilla sugar (1 opted this with extra 5grams of normal sugar and a little bit of vanilla powder)
1 egg
100 g soft Butter oder Margarine

Cheese Filling:
4 Eggs (seperated)
150 g Sugar
750 g Speisequark (Fresh cheese, you can opt this with Philidalphea)
1 packet Vanilla sugar (1 opted this with extra 5grams of normal sugar and a little bit of vanilla powder)
1 teaspoon  of very finely grated Lemon zest
2 tablespoon Flour
3 tablespoon Milk

Method:

For the base
  1. Mix all dried ingredients together.
  2. Use fingers and mix a little bit of butter at a time. Just like making bread crumbs. Add butter until finish and you will get a dough which have the texture of a cookie dough.
  3. Line your springform with the base. Put aside.
For the Filling
  1. Whip the egg whites with 1/3 of sugar until stiff. Put aside.
  2. Beat butter and sugar until creamy. Add yolks and beat until creamy.
  3. Beat in the fresh cheese until everything is incorporated. Then add the milk and fold in the flour.
  4. Fold in a little bit of egg white and mix vigourously. When the batter is lighter, fold in the rest of the egg whites. 
  5. Fold in the lemon zest.
  6. Pour the filling into the base.
Baking
  1. Bake at 160°C for 1 hour and 20 minutes .
  2. Leave the cake in the oven for 10 minutes (oven door ajar).
  3. Place it on a wire rack to cool completely.
